For those of you who are a little tired of the gelatinous tube that slurps out of the can every Thanksgiving with the sweet can indention. We offer this simple delicious cranberry sauce recipe.
What you need:
1 bag of cranberries which is about four cups of cranberries.
1 Orange.
1 to 2 inches of fresh ginger root.
2 cups of sugar (you may also use evaporated sugar cane juice – still sweet but better for you)
Optional: 1/2 cup of raisins and a 1/2 cup of chopped walnuts.
Directions
Take the cranberries out of the bag and give them a good rinse and place in a 2 to 5 quart pot.
Get a grater and grate the ginger.
Next wash the orange and use the grater to remove the zest of the orange (the zest is the outer layer of the orange). About a tablespoon’s worth. You can use more or less depending on you taste.
In the pot with the cranberries add the shredded ginger, the zest of the orange, 1 cup of water, the sugar, the fresh squeezed juice of the orange (you got the juice from).
Place over a medium heat. No lid.
Simmer until you hear the cranberries began to pop.
Reduce to a low heat and then add the optional cranberries and raisins.
And simmer until the sauce reaches a consistency you like. The longer it cooks the thicker it will become.
Enjoy leftovers on Ice Cream, Oatmeal, and of course Turkey sandwiches.
